We really didn't know what we were doing. The wasn't much of a manual that came with it and the internet wasn't a lot of help since we didn't have a small army nor specialized equipment such as scaffolding. A big milestone was achieved when we finally got rid of the temporary plywood in our kitchen and finished our custom concrete countertops. From hauling all the bags of concrete from the store, down the dock to a boat, then off the boat into our skiff, then out of our skiff onto the beach and up the hill to the house, to waiting patiently for the multiple coats of epoxy to dry, the project took a good long time. But the wait was worth it! This is our take on the classic Nicoise salad originating from Nice, France, which is traditionally served with hard boiled eggs or tuna, but we've substituted with salmon. This isn't a "composed" salad with individual ingredients purposefully arranged, no sir! It's roughly chopped for big hits of bright flavor and tossed together in a nice vinaigrette. Now is the time to use your best olive oil. Our salmon brings a clean finish to each bite since we have so carefully handled our fish out of the Pacific Ocean. Some of us are low carb, so we served the potatoes on the side, but in the recipe it calls for the potatoes to be mixed in, both delicious options. Give it a try! Make hollandaise sauce. For our recipe (serves 4), you need: 6 tablespoons clarified butter, 3 egg yolks, 2 teaspoons fresh lemon juice, 1.5 teaspoons hot pepper sauce, salt and pepper to taste. In a blender, blend the egg yolks, lemon juice and hot sauce until foamy and a little bit thickened. Heat the clarified butter just until it is liquid - you don't want it hot. With the blender on the lowest setting, very slowly add the butter. Season to taste with the salt and pepper and put somewhere warm until you are ready to use. Don't cook it! 2. Poach the eggs, toast the muffins, and flake the smoked salmon. Heat the smoked salmon either in a microwave, in a sauce pan on low heat, or in the oven on a cookie sheet. 3. To assemble, top the muffins with a poached egg, smoked salmon, and hollandaise sauce. Dough: You can use any dough you like. When we're fishing, time is often at a premium, so we love 5 minute pizza dough. Toppings: The most important ingredients are creativity, love, and good friends to share it with. We also like to drizzle the crust with olive oil and sprinkle with herbs (sage is a favorite) and a pinch of good salt on top. Then we add flaked smoked salmon, bell peppers, and a variety of cheese including feta, swiss, and white cheddar with roasted red pepper. Bake: When your oven is hot, sprinkle cornmeal on the pizza stone and slide the pizza on to the stone using a pizza peel. This was the first time we made the recipe and highly recommend it, easy and delicous! Here's our recipe, courtesy of Joanne Monson. 12 oz. Swiss cheese, shredded 8 oz. Gruyere cheese, shredded 1 and 1/2 tsp. cornstarch garlic clove, peeled 1 c. dry sherry 1 tsp. lemon juice 1 package smoked salmon, crumbled dash of ground nutmeg dash of ground pepper bread, apples, vegetables, and one package smoked salmon for dippers In a heavy saucepan over medium heat, combine the cheeses with the cornstarch. Rub the inside of the fondue pot with garlic. Pour in the sherry and lemon juice. Warm till air bubbles rise and cover the surface (do not cover or allow to boil.) From now on, stir constantly. Add a handful of cheeses, keeping heat medium. When melted, toss in another handful. After cheese is melted, add the crumbled smoked salmon and stir until combined. Add a dash of nutmeg and pepper. Transfer to the fondue pot and serve.
